Dinner on Busy Saturday (280816)

Why am I so busy on that Saturday.....even though school holiday has started but my has to go to school for extra UPSR coaching. Even on Saturday and Sunday all the way till Wednesday and it's normal school hours 7:30am-12:50pm. That's not all, then after he will have tuition to attend all the way back to back till 6:30pm. It's like normal week days for him.

My hubby has a running event in the evening and since I m joining him, I have to prepare dinner earlier and the easiest dinner to prepare is spaghetti Bolognese.

After dropping my boy at school, i went grocery shopping for the night's dinner. Luckily there is a hypermarket near my home that operates 24 hours. Bought the necessary ingredients, went home and start preparing....

There were two dishes for dinner...Potato salad and spaghetti Bolognese

Ingredients for potato salad
1) Potatoes
2) Mayonaise
3) Mustard
4) Salt and black pepper

Methods:
1) Peel and cut the potatoes into cubes
2) Bring the water to a boil, and boil the potatoes are barely tender when pierced with a knife
3) Drain the potatoes in a colander and let it sit to cool down before putting into the fridge
4) Meanwhile, in a another bowl, whisk together mayonnaise, mustard, salt and pepper. The proportion of mayonnaise and mustard is 3:1

Servings: Mix the dressing with the chilled potatoes and serve cold


Ingredients for spaghetti Bolognese:
1) Spaghetti
2) Onions
3) Minced pork
4) Tomatoes
5) Pasta Sauce

Methods:
1) Bring to boil a pan of water and cook the spaghetti al-dente
2) Add olive oil and parsley flakes to the cooked spaghetti and set a side
3) Heat up oil and sauté onions until fragrant and add in minced pork
4) Add in pasta sauce and mix well
5) Finally add in cubed tomatoes
6) Add salt and black pepper to taste




 

Yummy Spaghetti Bolognese served hot
